4		This is now making me think that maybe it's not that another metadata keyword will solve the problem as I see it, but rather that there should be a mechanism for showing in {{{port info NAME}}} not just the port's own variants, but also the variants that its dependencies have. Sort of like an rdeps but for variants.

That is to say, it would not only solve the problem of gtk3 handling the +quartz for things like gnumeric that just delegate that stuff to gtk, but also, it would assist in exposing things hidden by layers of dependencies, such as +no_ogg in webkit-gtk.
