TeTex looks for user's additional classess and fonts under ~/texmf. This should be changed to ~/Library/texmf. This behaviour is controlled with the variable $TEXMF but i don't know if this could be done at compile time or it should be done at run time.
Another dependency I'd add is ghostscript, since eps and ps image processing depend on it.
