Would it also be possible to build gnuplot with luaterm and pangocairo support enabled (default_variants +luaterm +pangocairo)?
The first variant - luaterm - enables the lua and tikz terminals, while the second one - pangocairo - enables the pdfcairo and pngcairo terminals (better compability with linux systems where the pdf terminal isn't available due to the pdflib-lite license problems).
