The latest git-core @1.8.1.3 doesn't seem to contain git-gui anymore. Where has it gone?

Never mind, just close this.
git-core had been deactivated during the last port upgrade (because of "/opt/local/libexec/git-core/git-subtree already exists and does not belong to a registered port"). Reinstalling fixed it.
