Question about +quartz & +x11 variants

Description
Many ports can build with +quartz or +x11, which are mutually exclusive.
My guess is +quartz accesses the latest http://xquartz.macosforge.org code.
My question is, "Is it just best to build +quartz variants or is there some case where +x11 variants are preferred?"
