For inetutils, this is the information under variants 

[+]client, server, universal

What does this even mean? Especially the plus sign? I also think a more detailed list for what the server and client options imply would be motivated.

I presume you haven't heard about doing this: 

$ port variants inetutils
inetutils has the variants:
[+]client: Enable all clients (with g prefix)
   server: Enable server daemons
   universal: Build for multiple architectures

The plus sign means that a particular variant is selected by default.
