The Audacity "Privacy Policy Notice" was updated 2021-07-02: https://web.archive.org/web/20210703200648/https://www.audacityteam.org/about/desktop-privacy-notice/

Should this port be replaced by a new fork? If so, which one? (I am unqualified to help decide, really)

Audacity has made these changes opt-in AFAIK, but a Tenacity fork is also available.

We'll see. As long as the software is (completely) open source it's always going to be possible to disable any parts of the code that phone home (see also https://github.com/ssight/free-aud). I guess a serious fork will be available by the time cleaning the code is no longer feasible.
It's sad that Audacity was for sale, but for now the current version of the port is sufficiently far behind the newest release that you have nothing to fear. Remember that this is old and quite stable software. Recent versions not yet in MacPorts introduced a new project format that does have some advantages but that change landed well before the sale.
