i686-w64-mingw32-binutils & x86_64-w64-mingw32-binutils fail to build on macOS High Sierra, ignoring that none of the wine ports currently support below macOS Catalina so no clue why you’d add wine-stable to this ticket.

I was not aware. Is there a version that will run on High Sierra?

Only the obsolete Winehq macOS pkg releases work on macOS High Sierra currently, unless i686-w64-mingw32-binutils & x86_64-w64-mingw32-binutils build problems can be figured out.
If i686-w64-mingw32-binutils & x86_64-w64-mingw32-binutils can be fixed then it should be possible to make these ports work on macOS Sierra & macOS High Sierra. I won't be able to support macOS Mojave as MacPorts doesn't support using Xcode Command Line Tools 10 included macOS_SDK_headers_for_macOS_10.14.pkg package to enable i386 support.
As I no longer have access to any hardware that can run legacy versions of macOS it would be difficult for me to work on getting these working.
